  • 240 ml whole milk
  • 115 g unsalted butter
  • 7 g active dry yeast
  • 75 g granulated sugar
  • 480 g all-purpose flour
  • 1 tsp salt
  • 3 large eggs
  • 225 g cream cheese (for filling)
  • 50 g powdered sugar (for filling)
  • 150 g fruit preserves (apricot, raspberry, etc.)
  • 1 tsp vanilla extract (for filling)
  • 1 egg (for egg wash)
  • 15 ml whole milk (for egg wash)

Directions

Step 1

In a small saucepan, heat the milk until warm (but not boiling) around 37-43°C (98-110°F). Remove from heat and add 1 tablespoon of granulated sugar. Stir in the active dry yeast and let it sit for 5-10 minutes until bubbly and activated.

Step 2

In a separate saucepan or microwave-safe bowl, melt the butter and allow it to cool slightly.

In a mixing bowl, combine 240 g (2 cups) of the flour, salt, the remaining granulated sugar, and the yeast mixture. Add the eggs and melted butter, then mix until combined.

Gradually add the remaining flour, 1/2 cup at a time, and knead the dough until it is smooth and slightly sticky. If using a stand mixer with dough hooks, knead for 6-8 minutes.
