  • 7 g Active dry yeast
  • 85 g Butter (unsalted)
  • 3 large Egg yolks
  • 5 ml Vanilla extract
  • 450 g All-purpose flour
  • 5 g Salt

Directions

Step 1

1. Heat the whole milk in a small saucepan over low heat until warm but not hot (about 38°C or 100°F). Remove from heat and stir in 1 tablespoon of the granulated sugar and the active dry yeast. Let the mixture sit for 5-10 minutes until frothy.

2. In a small bowl, melt the butter and allow it to cool slightly. In a large mixing bowl, whisk together the egg yolks, the remaining sugar, vanilla extract, and melted butter until combined.

3. Add the yeast mixture to the wet ingredients and stir until incorporated.

4. In a separate large bowl, combine the all-purpose flour and salt. Gradually add the dry ingredients to the wet ingredients, mixing with a wooden spoon or the dough hook attachment of a stand mixer on low speed.
