  • 500 milliliters beef stock
  • 1 stick cinnamon stick
  • 2 leaves bay leaves
  • 3 cloves whole cloves
  • 1 teaspoon dried oregano
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 teaspoon black pepper, freshly ground
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Cut the beef chuck into bite-sized cubes, about 2 inches each, and pat them dry with paper towels.

Step 2

Heat 2 tablespoons of olive oil in a large heavy-bottomed pot or Dutch oven over medium-high heat. Brown the beef cubes in batches, ensuring all sides are seared. Remove and set aside.
