  • 1 head (medium, about 1.5 lbs) Green cabbage
  • 3 medium Carrots
  • 1 large Yellow onion
  • 3 Garlic cloves
  • 3 medium Potatoes
  • 2 Celery stalks
  • 14 oz Tomatoes (diced, canned or fresh)
  • 6 cups Vegetable broth
  • 2 tbsp Olive oil
  • 1.5 tsp Salt
  • 1 tsp Black pepper
  • 1 tsp Paprika
  • 1 Bay leaf
  • 2 tbsp (chopped) Fresh parsley (optional, for garnish)

Directions

Step 1

Core and chop the cabbage into bite-sized pieces. Peel and dice the carrots and potatoes. Finely chop the onion and celery. Mince the garlic cloves.

Step 2

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the onion and celery, and sauté for about 5 minutes until softened.
