Ingredients

  • 2 pounds Russet or Yukon Gold potatoes
  • 2 teaspoons Salt
  • 4 cups Kale or green cabbage, finely shredded
  • 6 tablespoons Unsalted butter
  • 1 cup Whole milk
  • 4 Green onions, finely chopped
  • 0.5 teaspoons Black pepper

Directions

Step 1

Peel the potatoes and cut them into evenly sized chunks. Place the potatoes in a large pot and cover with cold water. Add 2 teaspoons of salt to the water and bring it to a boil over medium-high heat.

Step 2

Reduce the heat to a simmer and cook the potatoes for 15-20 minutes, or until they are fork-tender. Drain the potatoes and return them to the pot.

Step 3

While the potatoes cook, blanch the kale or cabbage in a separate pot of boiling water for about 3-4 minutes, until tender. Drain and set aside.

In a small saucepan, melt 4 tablespoons of butter over low heat. Add the chopped green onions and cook gently for 1-2 minutes, being careful not to brown them.

Add the milk to the saucepan with the green onions and warm it gently until it is heated through. Do not let it boil.
