Ingredients

  • 500 grams Ground lamb
  • 1 medium Onion, finely grated
  • 2 cloves Garlic, minced
  • 3 tablespoons Parsley, finely chopped
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 0.5 teaspoon Cinnamon
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 tablespoons Breadcrumbs
  • 1 large Egg
  • 150 grams Dried apricots, chopped
  • 500 milliliters Chicken or beef stock
  • 2 tablespoons Tomato paste
  • 1 tablespoon Honey
  • 1 tablespoon Lemon juice
  • 2 tablespoons Olive oil
  • 2 tablespoons Slivered almonds (optional, for garnish)
  • 2 tablespoons Fresh cilantro (optional, for garnish)

Directions

Step 1

In a large mixing bowl, combine the ground lamb, grated onion, minced garlic, parsley, ground cumin, ground coriander, cinnamon, salt, black pepper, breadcrumbs, and egg. Mix well until all the ingredients are evenly combined.

Step 2

Shape the mixture into small meatballs, about the size of a walnut. Place them on a plate and set aside.

Step 3

In a large skillet or sauté pan, heat 2 tablespoons of olive oil over medium heat. Add the meatballs in batches, being careful not to overcrowd the pan. Brown them on all sides, about 6-8 minutes total. Remove the browned meatballs and set aside.

Step 4

In the same pan, add the dried apricots, chicken or beef stock, tomato paste, honey, and lemon juice. Stir well to combine and bring the mixture to a simmer.

Step 5

Return the meatballs to the pan, gently nestling them into the sauce. Cover the skillet with a lid and simmer over low heat for 20-25 minutes, stirring occasionally, until the meatballs are cooked through and the sauce has thickened slightly.

Step 6

Taste the sauce and adjust seasoning with additional salt or lemon juice if needed.

Step 7

Transfer the meatballs and sauce to a serving dish. Garnish with slivered almonds and fresh cilantro, if desired. Serve warm with rice, couscous, or flatbread.
