Ingredients

  • 1 pound ground bison (or ground beef)
  • 1 cup wild rice
  • 2 cups chicken or beef broth
  • 1 medium onion, diced
  • 2 large carrots, diced
  • 2 stalks celery stalks, diced
  • 3 cloves garlic cloves, minced
  • 8 ounces button mushrooms, sliced
  • 1 can cream of mushroom soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 0.5 teaspoons paprika
  • 0.5 teaspoons dried thyme

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Rinse the wild rice under cold water and combine it with the chicken or beef broth in a medium saucepan. Bring to a boil, then reduce the heat to low, cover, and simmer for 40-45 minutes or until the rice is tender. Set aside.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the diced onion, carrots, and celery, and sauté for 5-7 minutes until softened.

Step 4

Add the minced garlic and sliced mushrooms to the skillet, and continue to sauté for an additional 3-4 minutes.

Step 5

Push the vegetables to one side of the skillet and add the ground bison (or ground beef) to the other side. Break up the meat with a spoon and cook until browned, about 5-6 minutes.

Season the meat and vegetable mixture with salt, black pepper, paprika, and dried thyme. Stir until well combined.

In a large mixing bowl, combine the cooked wild rice, meat and vegetable mixture, cream of mushroom soup, sour cream, and half of the shredded cheddar cheese. Mix thoroughly.

Transfer the mixture into a greased 9x13-inch casserole dish, spreading it evenly.

Sprinkle the remaining cheddar cheese over the top of the casserole.

Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.

Remove the foil and bake for an additional 10-15 minutes, or until the cheese on top is golden and bubbly.
