Ingredients

  • 3 tablespoons Butter
  • 1 medium, diced Onion
  • 2 medium, diced Carrots
  • 2 medium, diced Celery stalks
  • 2 minced Garlic cloves
  • 3 medium, peeled and diced Potatoes
  • 6 cups Chicken broth
  • 1 cup Heavy cream
  • 2 cups All-purpose flour
  • 2 large Eggs
  • 0.5 cup Water
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Dried parsley
  • 0.125 teaspoon Ground nutmeg

Directions

Step 1

In a large pot or Dutch oven, heat the butter over medium heat until melted.

Step 2

Add the diced onion, carrots, and celery. Sauté for 5-7 minutes until softened and fragrant.

Step 3

Stir in the minced garlic and cook for another 1 minute.

Step 4

Add the diced potatoes and chicken broth to the pot. Bring the mixture to a boil, then reduce the heat and simmer for 15-20 minutes or until the potatoes are tender.

Step 5

While the soup base is simmering, prepare the knoephla dumplings. In a medium bowl, combine the flour, eggs, water, and 1/2 teaspoon of salt. Stir until a soft dough forms.

Step 6

Using a teaspoon, scoop small pieces of the dough and drop them into the simmering soup. Alternatively, roll the dough into a thin rope and cut it into bite-sized pieces before adding to the soup.

Step 7

Cook the dumplings in the soup for 8-10 minutes or until they are cooked through and slightly firm.

Step 8

Stir in the heavy cream, 1 1/2 teaspoons of salt, black pepper, dried parsley, and ground nutmeg. Let the soup simmer for another 5 minutes to combine the flavors.

Step 9

Taste and adjust the seasoning as needed before serving.

Step 10

Ladle the soup into bowls and serve hot, garnished with extra parsley if desired.
