Ingredients

  • 2 cups All-purpose flour
  • 1 large Egg
  • 0.5 cups Water
  • 1 teaspoon Salt
  • 3 tablespoons Butter
  • 1 medium Yellow onion, diced
  • 3 medium Russet potatoes, peeled and diced
  • 6 cups Chicken broth
  • 1 cup Heavy cream
  • 0.5 teaspoons Ground black pepper
  • 0.5 teaspoons Dried thyme
  • 2 tablespoons Chopped fresh parsley (optional, for garnish)

Directions

Step 1

In a mixing bowl, combine the all-purpose flour and salt. Add the egg, then gradually stir in water until the dough comes together.

Step 2

Knead the dough for a few minutes, then roll it into small grape-sized dumplings and set aside.

Step 3

In a large pot, melt the butter over medium heat. Add the diced onion and sauté for 4-5 minutes until translucent.

Step 4

Add the diced potatoes to the pot and cook for 2 minutes, stirring occasionally.

Step 5

Pour in the chicken broth and bring the mixture to a boil. Reduce the heat and simmer for 10-12 minutes, until the potatoes begin to soften.

Step 6

Gently drop the dumplings into the soup, stirring occasionally to prevent them from sticking together.

Step 7

Cook the dumplings and potatoes for another 10-12 minutes, or until the dumplings are cooked through and tender.

Step 8

Stir in the heavy cream, ground black pepper, and dried thyme. Simmer for an additional 5 minutes, but do not let the soup boil.

Step 9

Taste and adjust seasoning with more salt, if needed.

Step 10

Ladle the soup into bowls and garnish with chopped fresh parsley, if desired. Serve hot.
