Ingredients

  • 2 cups All-purpose flour
  • 2 large Eggs
  • 0.5 cups Whole milk
  • 1 teaspoon Salt
  • 2 medium Potatoes (peeled and diced)
  • 2 medium Carrots (peeled and sliced)
  • 2 stalks Celery (chopped)
  • 1 medium Onion (diced)
  • 3 tablespoons Unsalted butter
  • 8 cups Chicken or vegetable broth
  • 1 cup Heavy cream
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Parsley (chopped, for garnish)

Directions

Step 1

In a mixing bowl, combine the flour and salt. Make a well in the center and add the eggs and milk. Mix until a soft, sticky dough forms. Set aside to rest.

Step 2

In a large pot, melt the butter over medium heat. Add the diced onion, carrots, and celery. Sauté for 5-7 minutes, or until the onions are softened and translucent.

Step 3

Add the diced potatoes and pour in the chicken or vegetable broth. Bring the mixture to a boil, then reduce the heat and let simmer for 10 minutes.

Step 4

While the soup simmers, prepare the knepfla (dumplings). Using a spoon or small scoop, drop small amounts of dough (approximately 1/2 teaspoon) into the simmering soup. The dough will puff up as it cooks.

Step 5

Let the dumplings cook for 8-10 minutes, stirring occasionally to prevent them from sticking to each other.

Step 6

Reduce the heat to low and stir in the heavy cream. Simmer gently for 5 more minutes. Season with black pepper and additional salt to taste.

Step 7

Ladle the soup into bowls, garnish with fresh parsley, and serve hot.
