Ingredients

  • 8 pieces Lasagna sheets
  • 2 cups Low-fat ricotta cheese
  • 5 cups Fresh spinach leaves
  • 0.5 cups Grated Parmesan cheese
  • 1 large Egg
  • 2 cloves Garlic
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Ground black pepper
  • 0.25 teaspoons Nutmeg
  • 2 cups Marinara sauce
  • 0.5 cups Shredded mozzarella cheese
  • 1 teaspoon Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish with olive oil.

Cook the lasagna sheets in a large pot of boiling salted water until al dente, following package instructions. Drain and lay flat on a clean kitchen towel to cool.

Step 3

Heat a large skillet over medium heat and add the spinach with a little water (if needed) to wilt it. Cook for 2-3 minutes, then transfer to a cutting board and chop finely.

In a large mixing bowl, combine the chopped spinach, low-fat ricotta cheese, grated Parmesan, egg, minced garlic, salt, pepper, and nutmeg. Mix until well blended to form the filling.
