  • 2 pounds Russet potatoes
  • 1.5 cups All-purpose flour
  • 1 large Egg
  • 1 teaspoon Salt
  • 4 tablespoons Unsalted butter
  • 0.5 cup Breadcrumbs
  • 2 tablespoons Fresh parsley
  • 0.25 teaspoon Ground black pepper

Directions

Step 1

Peel and cut the potatoes into chunks. Boil them in a large pot of salted water until tender, about 15-20 minutes.

Step 2

Drain the potatoes and mash them thoroughly in a large bowl until smooth. Allow them to cool slightly.

Add the flour, egg, and salt to the mashed potatoes. Mix until a soft dough forms. If the dough is too sticky, add a little more flour, 1 tablespoon at a time.
