Ingredients

  • 6 pieces chicken thighs (bone-in, skin-on)
  • 2 tablespoons olive oil
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 tablespoons fresh lemon juice
  • 4 cloves minced garlic
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 0.5 teaspoon black pepper
  • 1 teaspoon salt
  • 1 tablespoon unsalted butter
  • 0.5 cup chicken broth
  • 2 tablespoons fresh parsley

Directions

Step 1

In a medium bowl, whisk together olive oil, soy sauce, honey, lemon juice, minced garlic, smoked paprika, ground cumin, black pepper, and salt to create the marinade.

Step 2

Place the chicken thighs in a large zip-top bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight.

Step 3

Preheat your oven to 375°F (190°C).

Step 4

Heat a large oven-safe skillet over medium heat. Add the butter and let it melt. Once hot, add the chicken thighs, skin-side down, and sear for 3-4 minutes until the skin is golden brown. Flip and sear the other side for an additional 2 minutes.

Step 5

Remove the chicken temporarily from the skillet and drain any excess grease, leaving about 1 tablespoon in the pan.

Step 6

Return the chicken to the skillet, skin-side up, and pour in the chicken broth.

Step 7

Transfer the skillet to the preheated oven and bake for 25 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).

Step 8

Carefully remove the skillet from the oven. Remove the chicken thighs and set them aside on a plate, covering with foil to keep warm.

Step 9

Place the skillet back on the stovetop over medium heat. Let the liquid reduce slightly to create a thicker sauce, about 3-5 minutes.

Step 10

Drizzle the sauce over the chicken thighs and garnish with chopped fresh parsley before serving.
