Ingredients

  • 500 grams All-purpose flour
  • 250 grams Unsalted butter
  • 50 grams Granulated sugar
  • 100 milliliters Milk
  • 1 teaspoon Active dry yeast
  • 0.5 teaspoons Ground cardamom
  • 0.25 teaspoons Salt
  • 400 grams Date paste
  • 1 teaspoon Ground cinnamon
  • 1 tablespoon Vegetable oil (for greasing hands)
  • 1 unit Egg yolk
  • 1 tablespoon Milk (for egg wash)
  • 2 tablespoons Sesame seeds (optional)

Directions

Step 1

In a small bowl, dissolve the yeast in warm milk (not hot, about 38°C/100°F) and set aside for 5 minutes until it becomes frothy.

Step 2

In a large mixing bowl, combine the flour, sugar, ground cardamom, and salt.

Step 3

Add the butter into the dry ingredients and rub it in with your fingertips until the mixture resembles coarse crumbs.

Step 4

Pour the frothy yeast mixture into the bowl, and knead until a soft and pliable dough forms. If it feels dry, add a teaspoon or two of milk. Cover the dough with a kitchen towel and let it rest for 30 minutes.

Step 5

In a separate bowl, mix the date paste with the ground cinnamon and lightly knead until smooth. Grease your hands with vegetable oil if the paste is sticky.

Step 6

Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.

Step 7

Divide the dough into 2 portions for easier handling. Roll out one portion on a lightly floured surface into a rectangle, about 5 mm (1/4 inch) thick.

Step 8

Spread a thin, even layer of the date paste onto the rolled-out dough. Roll the dough tightly into a log, starting from one of the long edges.

Step 9

Using a sharp knife, cut the log into 2 cm (3/4 inch) slices, and place them flat onto the prepared baking sheet.

Step 10

Repeat with the remaining dough and date paste.

Step 11

In a small bowl, whisk together the egg yolk and milk to create the egg wash. Brush the tops of the cookies with this mixture, and sprinkle sesame seeds on top if desired.

Step 12

Bake in the preheated oven for 15-20 minutes, or until the cookies are golden brown.

Step 13

Allow the cookies to cool to room temperature on a wire rack before serving.
