Ingredients

  • 2 cups All-purpose flour
  • 0.75 cups Granulated sugar
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Ground cinnamon
  • 4 medium Ripe kiwifruit (peeled and diced)
  • 0.5 cups Milk
  • 0.25 cups Vegetable oil
  • 1 teaspoons Vanilla extract
  • 1 large Egg
  • 0.5 cups Chopped walnuts (optional)
  • 2 tablespoons Powdered sugar (for dusting, optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease the cups.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, salt, and ground cinnamon until evenly combined.

Step 3

In a medium bowl, whisk together the milk, vegetable oil, vanilla extract, and egg until smooth.

Step 4

Gradually add the wet ingredients into the dry ingredients, stirring gently until just combined. Avoid over-mixing; it’s okay if the batter has a few lumps.

Step 5

Fold in the diced kiwifruit and chopped walnuts (if using) until evenly distributed.

Step 6

Using a spoon or ice cream scoop, divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.

Step 7

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Once cooled, dust the tops with powdered sugar (if desired) before serving.

Step 10

Store leftover muffins in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
