Ingredients

  • 2 pieces Chicken breast
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 6 cups Spring mix lettuce
  • 3 pieces Kiwifruit
  • 1 large Avocado
  • 1 cup Cherry tomatoes
  • 1 small Red onion
  • 1 medium Cucumber
  • 1 cup Feta cheese
  • 1 tablespoon Honey
  • 2 tablespoons Lime juice
  • 1 teaspoon Dijon mustard
  • 1 tablespoon Balsamic vinegar
  • 2 tablespoons Fresh parsley

Directions

Step 1

Season the chicken breasts on both sides with 1 teaspoon of salt and 1 teaspoon of black pepper.

Step 2

Heat 2 tablespoons of olive oil in a skillet over medium heat. Cook the chicken for 6-7 minutes on each side, or until fully cooked (internal temperature should reach 165°F). Remove from the skillet and let rest for 5 minutes.

While the chicken cools, prepare the salad ingredients. Peel and slice the kiwifruit into thin rounds. Halve and pit the avocado, then slice it into thin wedges. Halve the cherry tomatoes. Thinly slice the red onion. Peel and slice the cucumber into rounds.

In a large salad bowl, combine the spring mix lettuce, sliced kiwi, avocado, cherry tomatoes, cucumber, and red onion. Crumble the feta cheese over the top.
