Ingredients

  • 4 whole (ripe) kiwi
  • 1 medium-sized red bell pepper
  • 0.5 medium-sized red onion
  • 1 whole (small, seeded for less heat) jalapeño
  • 0.25 cup (chopped) cilantro
  • 1 whole (juiced) lime
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Peel the kiwis and dice them into small, even-sized cubes. Add them to a mixing bowl.

Step 2

Wash the red bell pepper, remove the seeds and stem, and finely dice. Add to the bowl with the kiwis.

Step 3

Finely chop half of a red onion, ensuring the pieces are small and balanced in size compared to the other ingredients, and add to the bowl.

Step 4

Slice the jalapeño lengthwise and remove the seeds for a milder salsa (optional). Finely chop the jalapeño and add it to the mixture.

Step 5

Chop the cilantro leaves finely and measure out 1/4 cup. Stir it into the bowl with the other ingredients.

Step 6

Cut the lime in half and squeeze out the juice, removing any seeds. Add the lime juice to the bowl as it brightens the flavors.

Step 7

Season the salsa with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Mix everything gently but thoroughly to combine.

Step 8

Taste the salsa and adjust the salt, pepper, or lime juice to your liking.

Step 9

Cover the bowl with plastic wrap and let the salsa chill in the refrigerator for 10-15 minutes to allow the flavors to meld together.

Step 10

Serve the kiwi salsa with tortilla chips, as a topping for grilled chicken or fish, or as a vibrant side dish. Enjoy!
