Ingredients

  • 250 grams All-purpose flour
  • 150 grams Unsalted butter
  • 100 grams Granulated sugar
  • 2 pieces Fresh kiwi (mashed)
  • 1 piece Egg yolk
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.

Step 2

In a mixing bowl, sift together the all-purpose flour, baking powder, and salt. Set aside.

Step 3

In another large bowl, use a hand mixer or stand mixer to cream the butter and sugar until light and fluffy, about 2-3 minutes.

Step 4

Add the egg yolk and vanilla extract to the butter-sugar mixture and mix well until fully incorporated.

Step 5

Peel and mash the kiwis in a small bowl until smooth. Add the mashed kiwi to the wet mixture and combine well.

Step 6

Gradually add the dry ingredients (flour mixture) into the wet mixture, stirring gently until a soft dough forms. Do not overmix.

Step 7

Using a tablespoon or cookie scoop, drop spoonfuls of dough onto the prepared baking tray, leaving about 2 cm (1 inch) of space between each biscuit.

Flatten the tops of the biscuit dough slightly with the back of a spoon or your fingers.

Bake in the preheated oven for 12-15 minutes, or until the edges turn light golden brown.

Remove the biscuits from the oven and let them cool on the tray for 5 minutes before transferring them to a wire rack to cool completely.
