Ingredients

  • 4 pieces Chicken thighs (bone-in, skin-on)
  • 6 cups Chicken broth
  • 2 cups Water
  • 2 cups Carrots (peeled and diced)
  • 1 cup Celery (diced)
  • 1 medium Yellow onion (diced)
  • 2 cloves Garlic (minced)
  • 2.5 cups All-purpose flour
  • 1 tablespoon Baking powder
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Fresh parsley (chopped, optional)
  • 4 tablespoons Butter (cold, diced)
  • 0.75 cup Whole milk
  • 1 tablespoon Vegetable oil

Directions

Step 1

In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.

Season the chicken thighs with 1 teaspoon of salt and half the black pepper. Sear the chicken in the pot for 4-5 minutes on each side until golden brown. Remove chicken and set aside.

In the same pot, add the diced onion, carrots, and celery. Sauté for 5-6 minutes until softened, then add garlic and cook for another minute.

Return the chicken to the pot and pour in the chicken broth and water. Bring the mixture to a boil, then reduce the heat to low and simmer uncovered for 30 minutes.

After 30 minutes of simmering, remove the chicken from the pot. Allow it to cool slightly, then shred the meat off the bones. Discard the bones and skin.

Return the shredded chicken to the pot and adjust the seasoning of the broth with additional salt and pepper if necessary.

Bring the pot back to a gentle boil. Using a tablespoon or small cookie scoop, drop spoonfuls of the dumpling dough onto the surface of the simmering broth. Do not overcrowd the pot.

Cover the pot with a lid and reduce the heat to low. Let the dumplings cook undisturbed for 15-20 minutes until they are fluffy and fully cooked through.
