Ingredients

  • 2.5 cups All-purpose flour
  • 2.5 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 0.75 cups Unsalted butter, softened
  • 1.75 cups Granulated sugar
  • 6 large Egg whites, room temperature
  • 2 teaspoons Vanilla extract
  • 1 cup Whole milk, room temperature

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans and line the bottoms with parchment paper for easy removal.

Step 2

In a medium bowl, sift together the all-purpose flour, baking powder, and salt. Set the dry ingredients aside.

Step 3

In a large mixing bowl, beat together the softened butter and granulated sugar using a hand or stand mixer on medium-high speed until the mixture is light and fluffy, about 3-4 minutes.

Step 4

Add in the egg whites, one at a time, beating well after each addition. Then mix in the vanilla extract until fully incorporated.

Step 5

Reduce the mixer speed to low and alternately add the dry ingredients and the milk to the batter, beginning and ending with the dry ingredients. Use about 3 additions for the dry ingredients and 2 for the milk. Mix just until combined; do not overmix.

Step 6

Evenly divide the batter between the prepared pans, smoothing the tops with a spatula.

Step 7

Bake the cakes in the preheated oven for 28-30 minutes, or until a toothpick inserted into the center comes out clean.

Step 8

Remove the cakes from the oven and let them cool in the pans for about 10 minutes. Then, carefully turn them out onto a wire rack to cool completely.

Step 9

Once cooled, frost the cakes with your favorite frosting and decorate as desired.
