  • 2 medium, diced Green bell peppers
  • 1 medium, diced Red bell pepper
  • 1 medium, finely chopped Yellow onion
  • 3 cloves, minced Garlic
  • 6 cups Beef broth
  • 28 oz can Diced tomatoes
  • 15 oz can Tomato sauce
  • 0.5 cup White rice (uncooked)
  • 1 tsp Dried oregano
  • 1 tsp Dried basil
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper
  • 1 tbsp Olive oil (optional, for cooking)
  • 2 tbsp, chopped Parsley (optional, for garnish)

Directions

Step 1

In a large pot or Dutch oven, heat olive oil (if using) over medium-high heat.

Step 2

Add ground beef and cook, breaking it into crumbles, until browned and no longer pink, about 5-7 minutes. Drain excess fat if necessary.

Step 3

Add the diced green and red bell peppers, chopped onion, and minced garlic to the pot. Cook, stirring occasionally, until the vegetables soften, about 5 minutes.

Step 4

Pour in the beef broth, diced tomatoes (with juices), and tomato sauce. Stir to combine.

Step 5

Add the uncooked rice, dried oregano, dried basil, salt, and ground black pepper. Stir well.

Step 6

Bring the soup to a simmer, then reduce the heat to low. Cover and simmer for 25-30 minutes, stirring occasionally, until the rice is tender and the flavors have melded together.

Step 7

Taste and adjust seasoning if needed, adding more salt or pepper to preference.

Step 8

Ladle the soup into bowls and garnish with freshly chopped parsley, if desired. Serve hot.
