Ingredients

  • 2 teaspoons olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic cloves, minced
  • 28 ounces canned diced tomatoes (no salt added)
  • 2 cups low-sodium chicken or vegetable broth
  • 2 tablespoons tomato paste
  • 1 teaspoon granulated sugar
  • 1 teaspoon dried basil
  • 0.5 teaspoons dried oregano
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 cup low-fat milk or unsweetened almond milk
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 2 tablespoons optional fresh basil or parsley, for garnish

Directions

Step 1

In a large pot, heat the olive oil over medium heat.

Step 2

Add the chopped onion and sauté for 3-4 minutes, until softened and translucent. Stir in the minced garlic and cook for another 1 minute, being careful not to burn it.

Step 3

Pour in the canned diced tomatoes, including their juices, and add the chicken or vegetable broth. Stir well to combine.

Step 4

Mix in the tomato paste, sugar, dried basil, dried oregano, salt, and black pepper. Bring the mixture to a boil, then reduce the heat to low and allow it to simmer for 20 minutes, stirring occasionally.

Step 5

Using an immersion blender (or working in batches with a countertop blender), puree the soup until smooth. Return the soup to the pot if necessary.

Step 6

In a small bowl, whisk together the cornstarch and water until completely dissolved. Gradually stir the mixture into the soup to thicken it.

Step 7

Pour in the low-fat milk or unsweetened almond milk, stirring constantly until well blended and the soup is heated through. Do not bring the soup to a boil after adding the milk to prevent curdling.

Step 8

Taste and adjust seasoning with additional salt or pepper, if desired.

Step 9

Ladle the soup into bowls and garnish with chopped fresh basil or parsley, if using. Serve hot with crusty bread or crackers on the side. Enjoy!
