Ingredients

  • 4 cups Fresh fruit (strawberries, peaches, blueberries, etc.)
  • 1 cup Granulated sugar
  • 1 teaspoon Ascorbic acid (optional, for color preservation)
  • 2 tablespoons Water (for dissolving ascorbic acid, optional)

Directions

Step 1

Gently wash the fruit under cold running water and allow it to drain completely. Pat dry with paper towels.

Step 2

If needed, prepare the fruit: hull and slice strawberries, peel and slice peaches, or remove stems from blueberries.

Step 3

If desired, dissolve ascorbic acid in 2 tablespoons of water and sprinkle it over the fruit. This step helps prevent discoloration during freezing.

Step 4

In a large mixing bowl, combine the fresh fruit with granulated sugar. Gently toss until the fruit is evenly coated, being careful not to crush delicate fruits.

Step 5

Allow the fruit and sugar mixture to sit for about 10-15 minutes. During this time, the sugar will dissolve and create a natural syrup with the fruit's juices.

Step 6

Pack the prepared fruit into freezer-safe containers or resealable freezer bags, leaving about 1/2 inch of headspace to allow for expansion during freezing.

Step 7

Seal the containers or bags tightly, removing as much air as possible to prevent freezer burn.

Step 8

Label the containers or bags with the type of fruit and the date it was packed.

Step 9

Place the fruit in the freezer immediately. For best quality, use the frozen fruit within 12 months.
