Ingredients

  • 6 whole green bell peppers
  • 1 lb ground beef
  • 1 cup cooked white rice
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1.5 cups tomato sauce
  • 1 14.5 oz can diced tomatoes, with juice
  • 0.25 cup Parmesan cheese, grated
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 0.5 tsp pepper
  • 1 cup shredded mozzarella cheese
  • 1 tbsp olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cut the tops off the green bell peppers and remove the seeds and membranes. Lightly sprinkle the interior with salt and set aside.

Step 3

In a skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté until softened, about 3 minutes. Stir in the minced garlic and cook for 30 seconds.

Step 4

Add the ground beef to the skillet and cook until browned, breaking it apart as it cooks. Drain any excess fat.
