Ingredients

  • 2 cups All-purpose flour
  • 2 tablespoons Granulated sugar
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Salt
  • 0.5 cup Cold butter
  • 0.66 cup Milk
  • 1 large Egg
  • 4 cups Fresh strawberries
  • 0.25 cup Granulated sugar (for strawberries)
  • 1 cup Heavy whipping cream
  • 2 tablespoons Powdered sugar
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt.

Step 3

Using a pastry cutter or your fingers, cut in the cold butter until the mixture resembles coarse crumbs.

Step 4

In a separate bowl, whisk together the milk and egg. Pour this mixture into the dry ingredients and stir until just combined. Do not overmix.

Step 5

Turn the dough out onto a floured surface and gently pat it into a 3/4-inch thick circle. Using a 2.5-inch biscuit cutter, cut out rounds and place them on the prepared baking sheet. Re-roll the leftover dough and cut additional rounds as needed.

Step 6

Bake the shortcakes in the preheated oven for 12-15 minutes or until golden brown. Remove from the oven and allow them to cool slightly on a wire rack.

Step 7

While the shortcakes bake, prepare the strawberries. Slice the strawberries and toss them in a bowl with the 1/4 cup granulated sugar. Let them sit for at least 15 minutes to macerate and release their juices.

Step 8

Prepare the whipped cream by beating the heavy whipping cream, powdered sugar, and vanilla extract with a hand mixer or stand mixer on medium-high speed until soft peaks form.

Step 9

To assemble the shortcakes, slice each shortcake in half horizontally. Spoon a generous helping of macerated strawberries onto the bottom half of each biscuit, followed by a dollop of whipped cream. Place the top half of the biscuit on top.

Step 10

Serve immediately and enjoy the deliciousness!
