Ingredients

  • 14 oz canned salmon
  • 2 large eggs
  • 1 cup breadcrumbs
  • 2 stalks green onions
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 3 tablespoons vegetable oil

Directions

Step 1

Drain the canned salmon and transfer it to a large mixing bowl. Remove any large bones and skin, if desired.

Step 2

Flake the salmon with a fork, breaking it into small pieces.

Step 3

Finely chop the green onions and parsley, then add them to the salmon.

Step 4

In the same bowl, add the eggs, breadcrumbs, mayonnaise, Dijon mustard, lemon juice, garlic powder, paprika, salt, and black pepper.

Step 5

Mix all the ingredients together thoroughly until well combined. The mixture should be moist but firm enough to mold into patties.

Step 6

Using your hands, shape the mixture into 8 evenly sized patties about 1/2 inch thick.

Step 7

Heat the vegetable oil in a large skillet over medium heat.

Step 8

Once the oil is hot, place the patties in the skillet without overcrowding. Cook in batches if necessary.

Step 9

Fry the patties for about 4-5 minutes on each side, or until golden brown and crisp.

Step 10

Remove the cooked patties from the skillet and place them on a paper towel-lined plate to drain excess oil.

Step 11

Serve warm with your choice of dipping sauce, a squeeze of fresh lemon, or a side salad.
