  • 4 garlic cloves, smashed
  • 2 tablespoons tomato paste
  • 3 bay leaves
  • 5 fresh thyme sprigs
  • 10 whole black peppercorns
  • 5 parsley stems (optional)
  • 20 cups cold water
  • 1 teaspoon salt (adjust based on preference)
  • 2 tablespoons vegetable oil (for roasting bones, if using stove top method)

Directions

Step 1

If roasting bones for enhanced flavor (optional but recommended): Preheat your oven to 425°F (220°C). Place the beef bones in a roasting pan and drizzle them with vegetable oil. Roast for 30-40 minutes, turning once, until they are well-browned.

In the slow cooker or a large stockpot, add the beef bones (roasted or raw), carrots, celery, onion, and garlic.

Add the tomato paste, bay leaves, thyme sprigs, black peppercorns, and parsley stems (if using).

Pour in cold water to cover all ingredients by about an inch (approximately 20 cups). Add salt, but start with 1 teaspoon – you can adjust the seasoning later.

For the slow cooker: Cover and cook on low for 10-12 hours, or until the stock is deep brown and richly flavored. For the stove top: Bring the pot to a boil over medium-high heat. Once cooked, remove and discard the solids using a slotted spoon or a fine mesh strainer. Strain the stock through a fine strainer or cheesecloth into a large bowl or clean pot.

Allow the stock to cool slightly, then refrigerate. Once chilled, skim off the solidified fat from the surface, if desired.

Store the stock in airtight containers in the refrigerator for up to 5 days, or freeze for longer storage (up to 3 months).
