Ingredients

  • 1.5 pounds Pork shoulder, cut into 1-inch cubes
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons All-purpose flour
  • 2 tablespoons Olive oil
  • 1 large Onion, diced
  • 3 cloves Garlic cloves, minced
  • 2 medium Carrots, peeled and sliced
  • 2 stalks Celery stalks, sliced
  • 3 medium Potatoes, peeled and diced
  • 1 can (14 oz) Crushed tomatoes
  • 4 cups Chicken or vegetable broth
  • 1 leaf Bay leaf
  • 1 teaspoon Dried thyme
  • 1 teaspoon Paprika
  • 12 ounces Dried pasta (e.g., penne or rigatoni)
  • 2 tablespoons Fresh parsley, chopped (optional for garnish)

Directions

Step 1

Season the pork cubes with salt and pepper, then coat them evenly in the all-purpose flour.

Step 2

In a large heavy-bottomed pot or Dutch oven, heat the olive oil over medium heat. Add the pork in batches and brown on all sides. Remove the pork from the pot and set aside.

Step 3

In the same pot, add the diced onion and sauté until softened and translucent, about 5 minutes. Stir in the minced garlic and cook for another 30 seconds until fragrant.

Step 4

Add the carrots, celery, and potatoes to the pot. Stir well to combine the vegetables with the onion and garlic.

Step 5

Return the browned pork to the pot. Add the crushed tomatoes, chicken or vegetable broth, bay leaf, dried thyme, and paprika. Stir to combine.

Step 6

Bring the mixture to a boil, then reduce the heat to low. Cover the pot with a lid and simmer for 1 hour, stirring occasionally, until the pork is tender and the flavors have melded together.

Step 7

While the stew is simmering, cook the pasta according to the package instructions until al dente. Drain and set aside.

Step 8

Remove the bay leaf from the stew. Taste and adjust the seasoning with additional salt and pepper as needed.

Step 9

To serve, spoon the pork stew over a bed of cooked pasta. Garnish with fresh parsley, if desired.
