Ingredients

  • 2 pieces steak (ribeye, sirloin, or fillet)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 sprigs fresh rosemary or thyme
  • 2 cloves garlic cloves (smashed)

Directions

Step 1

Remove the steaks from the refrigerator about 30 minutes before cooking to allow them to come to room temperature for even cooking.

Step 2

Pat the steaks dry with paper towels to help achieve a perfect sear. Generously season both sides with salt, black pepper, and garlic powder.

Step 3

Heat a heavy-bottomed skillet (such as cast iron) over medium-high heat until very hot. Add the olive oil and heat until it starts to shimmer.

Step 4

Carefully place the steaks into the hot pan. Sear for 3-4 minutes without moving them to develop a deep, golden crust.

Step 5

Flip the steaks and reduce the heat to medium. Add the unsalted butter, smashed garlic cloves, and fresh rosemary or thyme sprigs to the pan.

Step 6

Tilt the pan slightly to pool the melted butter, and use a spoon to continuously baste the steaks with the butter-garlic-herb mixture for 2-3 minutes.

Step 7

Check the internal temperature of the steaks with a meat thermometer: 125°F for rare, 135°F for medium-rare, 145°F for medium. Adjust cooking time as needed to achieve the desired doneness.

Step 8

Once the steaks are done, transfer them to a cutting board and let them rest for 5-7 minutes to allow the juices to redistribute.

Step 9

Slice the steaks against the grain and serve with your favorite side dishes, garnished with a drizzle of the butter from the pan if desired.
