Ingredients

  • 4 cups (finely chopped) Yellow onions
  • 1 cup All-purpose flour
  • 1 cup Cornmeal
  • 1 teaspoon Baking powder
  • 2 teaspoons Granulated sugar
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 large Eggs
  • 1 cup Milk
  • 0.5 cup (for frying, more if needed) Vegetable oil

Directions

Step 1

Peel and finely chop the yellow onions until you have 4 cups. Set aside.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, cornmeal, baking powder, granulated sugar, salt, and black pepper.

Step 3

In a separate bowl, beat the eggs and mix in the milk until well combined.

Step 4

Gradually add the wet egg mixture to the dry flour mixture, stirring until a batter forms. The batter should be slightly thick and able to coat the chopped onions well.

Step 5

Mix the chopped onions into the batter until evenly coated.

Step 6

Heat the vegetable oil in a large skillet over medium heat. The oil should be hot enough to sizzle when a small drop of batter is added, but not smoking.

Step 7

Using a spoon or small scoop, drop about 2-3 tablespoons of the onion batter into the hot oil for each patty, flattening slightly with the back of the spoon to form a patty shape.

Step 8

Cook each patty for about 2-3 minutes per side, or until golden brown and crispy. Flip carefully using a spatula.

Step 9

Remove the patties and place them on a plate lined with paper towels to drain excess oil.

Step 10

Repeat the process with the remaining batter, adding more oil to the skillet as needed.

Step 11

Serve hot with your choice of dipping sauce, sour cream, or applesauce. Enjoy!
