Ingredients

  • 1 cup short-grain white rice
  • 2 cups water
  • 4 cups whole milk
  • 1 cup sugar
  • 2 tablespoons unsalted butter
  • 2 teaspoons pure vanilla extract
  • 0.25 teaspoons ground cinnamon (optional, for garnish)
  • 0.5 cup raisins (optional)
  • 1 pinch pinch of salt

Directions

Step 1

Rinse the rice under cold water until the water runs clear to remove excess starch.

Step 2

In a medium-sized pot, bring the 2 cups of water to a boil.

Step 3

Stir in the rice and a pinch of salt. Reduce the heat to low, cover, and simmer for about 15 minutes, or until most of the water is absorbed and the rice is tender.

Step 4

Add the milk, sugar, and butter to the pot with the cooked rice. Stir well to combine.

Step 5

Cook the mixture over medium-low heat, stirring frequently to prevent sticking, for about 30–35 minutes or until the rice pudding thickens to your desired consistency.

Step 6

Stir in the vanilla extract and raisins (if using) once the pudding is done cooking. Mix well.

Step 7

Remove the pot from the heat and let the pudding cool slightly. The pudding will thicken as it cools.

Step 8

Serve warm or chilled. Optionally, sprinkle ground cinnamon on top before serving for extra flavor.
