Ingredients

  • 12 ears Fresh corn on the cob
  • 6 cups Water
  • 2 tablespoons Sugar
  • 1 teaspoon Salt

Directions

Step 1

1. Husk the corn and remove all the silk. Rinse the ears of corn under cold running water.

Step 2

2. Using a sharp knife, cut the kernels off each ear of corn. Hold the cob vertically over a large mixing bowl to catch the kernels as you slice downward.

Step 3

3. In a large pot, bring 6 cups of water to a boil over high heat.

Step 4

4. Add the sugar and salt to the boiling water, stirring until fully dissolved.

Step 5

5. Add the corn kernels to the boiling water. Reduce the heat to medium and cook the corn for 8-10 minutes, stirring occasionally.

Step 6

6. Remove the pot from heat and allow the corn mixture to cool to room temperature.

Step 7

7. Once cooled, ladle the corn along with some of the cooking liquid into airtight, freezer-safe containers or resealable freezer bags. Leave about 1 inch of headspace at the top to allow for expansion during freezing.

Step 8

8. Seal the containers or bags, pressing out any excess air. Label with the date and freeze immediately.

Step 9

9. To use, remove the desired portion from the freezer and thaw in the fridge or reheating medium (such as a saucepan or microwave) until warmed through.
