Ingredients

  • 3 cups Broccoli florets
  • 3 cups Cauliflower florets
  • 2 cups Carrots, thinly sliced
  • 1 large Red bell pepper, sliced into strips
  • 1 large Yellow bell pepper, sliced into strips
  • 1 cup Cherry tomatoes
  • 0.5 cup Extra virgin olive oil
  • 0.25 cup Red wine vinegar
  • 2 cloves Garlic, minced
  • 2 tablespoons Honey
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Wash and prepare all the vegetables: trim and separate the broccoli and cauliflower into bite-sized florets, slice the carrots and bell peppers, and halve the cherry tomatoes if desired.

Step 2

In a large mixing bowl, combine the broccoli, cauliflower, carrots, bell peppers, and cherry tomatoes. Set aside.

Step 3

In a smaller bowl, prepare the marinade by whisking together the olive oil, red wine vinegar, minced garlic, honey, Dijon mustard, dried oregano, salt, and black pepper until well combined.

Step 4

Pour the marinade over the prepared vegetables, tossing everything together gently to ensure the vegetables are evenly coated.

Step 5

Cover the bowl with plastic wrap or transfer the vegetables and marinade to a large resealable plastic bag. Refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld.

Step 6

Stir or shake the vegetables occasionally while marinating to distribute the flavors evenly.

Step 7

Before serving, sprinkle the marinated vegetables with freshly chopped parsley for added flavor and a pop of color.

Step 8

Serve chilled or at room temperature as a flavorful side dish or appetizer.
