Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely chopped
  • 4 cloves garlic cloves, minced
  • 2 tablespoons tomato paste
  • 28 ounces canned crushed tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 0.5 teaspoon dried thyme
  • 1 teaspoon sugar
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon crushed red pepper flakes (optional, for heat)
  • 1 bay leaf
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)
  • 0.25 cup water (if needed to thin sauce)

Directions

Step 1

Heat the olive oil in a large saucepan or skillet over medium heat.

Step 2

Add the finely chopped onion and sauté for 5-7 minutes, or until soft and translucent.

Step 3

Stir in the minced garlic and cook for an additional 1-2 minutes, being careful not to let it burn.

Step 4

Add the tomato paste to the pan and stir well to combine. Cook for 2-3 minutes, allowing the paste to slightly caramelize and develop flavor.

Step 5

Add the canned crushed tomatoes to the pan and stir thoroughly.

Step 6

Mix in the dried basil, oregano, thyme, sugar, salt, black pepper, and crushed red pepper flakes (if using). Stir to combine.

Step 7

Place the bay leaf into the sauce and reduce the heat to low. Simmer uncovered for 30-40 minutes, stirring occasionally to prevent burning.

Step 8

If the sauce becomes too thick, add up to 1/4 cup of water to reach your desired consistency.

Step 9

Taste and adjust seasoning, adding more salt, sugar, or red pepper flakes as needed.

Step 10

Remove the bay leaf before serving.

Step 11

Serve the marinara sauce hot over your favorite pasta, garnished with freshly chopped parsley if desired.
