Ingredients

  • 1 cup unsalted butter
  • 2 cups celery, finely chopped
  • 1 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 10 cups day-old bread, cubed
  • 2 teaspoons poultry seasoning
  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • 2.5 cups chicken broth
  • 2 large eggs, lightly beaten
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup parsley, chopped

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or grease it lightly with butter.

Step 2

In a large skillet, melt the butter over medium heat. Add the celery, onion, and garlic. Cook for about 10 minutes, stirring occasionally, until the vegetables are tender and fragrant.

Step 3

In a large mixing bowl, combine the cubed bread, poultry seasoning, dried sage, and dried thyme. Mix well to distribute the seasonings.

Step 4

Pour the cooked vegetable mixture over the bread cubes. Toss gently to combine.

Step 5

Add the chicken broth to the mixture gradually, tossing carefully until the bread absorbs the liquid and becomes moist but not soggy. You may not need to use all the broth.

Step 6

Stir in the beaten eggs, salt, black pepper, and chopped parsley. Mix until everything is evenly combined.

Step 7

Using your hands, shape the mixture into 10 to 12 balls, each about the size of a large meatball (around 3 inches in diameter). Place the balls on the prepared baking sheet, spacing them at least 1 inch apart.

Step 8

Bake in the preheated oven for 30-40 minutes, or until the stuffing balls are lightly golden and set.

Step 9

Remove from the oven and let cool slightly before serving. If making ahead, allow to cool completely, then refrigerate or freeze in an airtight container. Reheat in the oven at 325°F (165°C) until warmed through.
