Ingredients

  • 1 pound Breakfast sausage
  • 2 cups All-purpose flour
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Salt
  • 2 large Eggs
  • 1 cup Milk
  • 1 cup Shredded cheddar cheese
  • 0.5 cup Chopped green onions
  • 0.25 teaspoon Black pepper
  • 0 Cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a skillet over medium heat, cook the sausage until browned and fully cooked. Break it into small crumbles as it cooks. Once done, drain any excess grease and set aside to cool slightly.

Step 3

In a large mixing bowl, combine the flour, baking powder, and salt. Whisk together to ensure that the dry ingredients are evenly distributed.

Step 4

In another bowl, beat the eggs and then whisk in the milk.

Step 5

Pour the wet ingredients into the bowl with the dry ingredients and gently stir until just combined. Do not overmix.

Step 6

Add the cooked sausage, shredded cheddar cheese, chopped green onions, and black pepper to the batter. Fold everything together until evenly incorporated.

Step 7

Lightly grease a 12-cup muffin tin with cooking spray or line it with paper muffin liners.

Step 8

Divide the batter evenly among the 12 muffin cups, filling each about three-quarters full.

Step 9

Bake in the preheated oven for 20-25 minutes, or until the muffins are golden on top and a toothpick inserted into the center comes out clean.

Step 10

Remove the muffins from the oven and let them cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely.

Step 11

Once cooled, the muffins can be stored in an airtight container in the refrigerator for up to 5 days or frozen for up to 3 months. Reheat in the microwave or oven before serving.
