Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 0.5 cups All-purpose flour
  • 1 teaspoons Salt
  • 0.5 teaspoons Ground black pepper
  • 3 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 1 cups Chicken broth
  • 0.25 cups Fresh lemon juice
  • 2 tablespoons Capers
  • 2 cloves Garlic (minced)
  • 2 tablespoons Fresh parsley (chopped, for garnish)

Directions

Step 1

Place chicken breasts between two sheets of plastic wrap or parchment paper. Use a meat mallet or rolling pin to pound them to an even thickness of about 1/2 inch.

Step 2

In a shallow dish, mix the flour, salt, and ground black pepper. Dredge each chicken breast in the flour mixture, shaking off the excess.

Step 3

In a large skillet, heat 2 tablespoons of butter and all of the olive oil over medium-high heat. Add the chicken breasts and cook for 3-4 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside on a plate.

Lower the heat to medium, then add the remaining tablespoon of butter to the skillet. Stir in the minced garlic and sauté for 30 seconds until fragrant.

Transfer the chicken to serving plates and drizzle with the piccata sauce. Garnish with fresh parsley.
