Ingredients

  • 3 cups (grated) zucchini
  • 2 large eggs
  • 1 cup (shredded) mozzarella cheese
  • 0.25 cup (grated) Parmesan cheese
  • 0.5 cup all-purpose flour
  • 0.33 cup Italian-seasoned breadcrumbs
  • 2 cloves (minced) garlic
  • 2 tablespoons (chopped) fresh parsley
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 3 tablespoons vegetable oil

Directions

Step 1

Grate the zucchini and place it in a clean kitchen towel or cheesecloth. Squeeze out as much excess moisture as possible and transfer to a large mixing bowl.

Step 2

To the bowl with the zucchini, add the eggs, shredded mozzarella cheese, grated Parmesan cheese, flour, breadcrumbs, minced garlic, chopped parsley, salt, and black pepper. Mix thoroughly until well combined.

Step 3

Heat the vegetable oil in a large skillet over medium heat.

Step 4

Scoop about 2 tablespoons of the zucchini mixture and shape it into a small patty. Repeat with the remaining mixture.

Step 5

Carefully place the patties into the hot skillet, working in batches to avoid overcrowding.

Step 6

Cook each patty for 3-4 minutes on each side, or until golden brown and crispy. Add more oil if needed between batches.

Step 7

Transfer the cooked patties to a plate lined with paper towels to drain any excess oil.

Step 8

Serve warm as a side dish, appetizer, or with a dollop of sour cream or marinara sauce for dipping.
