Ingredients

  • 3 lbs pork bones (neck bones, shanks, or ribs)
  • 2 large onion, peeled and quartered
  • 3 medium carrot, roughly chopped
  • 3 large celery stalks, roughly chopped
  • 6 cloves garlic cloves, smashed
  • 1 tbsp black peppercorns
  • 2 leaves bay leaves
  • 1 bunch fresh parsley
  • 2 tbsp apple cider vinegar
  • 16 cups cold water
  • 1 tsp salt (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C). Arrange the pork bones on a baking sheet and roast for 30-40 minutes, turning once, until the bones are golden brown for added depth of flavor.

Transfer the roasted bones to a large stockpot. Add the onions, carrots, celery, garlic, peppercorns, bay leaves, and fresh parsley.

Pour the apple cider vinegar over the ingredients, then add the cold water. The water should completely cover the ingredients, but make sure not to overfill the pot.

Bring the stock to a gentle boil over medium-high heat. As soon as it starts bubbling, reduce the heat to low and simmer uncovered.

Skim off any foam or impurities that rise to the surface during the first 30 minutes of cooking. Continue to skim as necessary.
