Ingredients

  • 6 tablespoons unsalted butter
  • 1 cup yellow onion, finely chopped
  • 1 cup celery, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary, crushed
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.75 cup dried cranberries, roughly chopped
  • 8 cups day-old bread, cubed (preferably white or French bread)
  • 1.5 cups chicken or vegetable stock
  • 2 large eggs, lightly beaten
  • 1 as needed oil or cooking spray (for greasing the baking sheet)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly grease it with oil or cooking spray.

Step 2

In a large skillet, melt the butter over medium heat. Add the chopped onion and celery and sauté for about 5-7 minutes, until softened.

Step 3

Stir in the minced garlic, parsley, sage, thyme, rosemary, salt, and black pepper. Cook for an additional 1-2 minutes to combine the flavors.

Step 4

Remove the skillet from heat and stir in the chopped dried cranberries.

Step 5

In a large mixing bowl, combine the bread cubes with the sautéed vegetable and herb mixture.

Step 6

Gradually pour the chicken or vegetable stock over the bread mixture, tossing gently to moisten the bread evenly. Be careful not to over-soak.

Step 7

Add the beaten eggs to the mixture and mix gently until just combined.

Step 8

Using clean hands or a standard ice cream scoop, shape the mixture into golf ball-sized portions and place them onto the prepared baking sheet.

Step 9

Bake in the preheated oven for 20-25 minutes, or until the stuffing balls are golden brown and slightly crisp on the outside.

Step 10

Remove from the oven and allow the stuffing balls to cool slightly before serving. Serve as a delicious holiday side dish alongside turkey, ham, or other festive mains.
