Ingredients

  • 1 pound ground beef
  • 8 ounces white button mushrooms
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic cloves, minced
  • 2 cups tomato sauce
  • 1 14.5-ounce can diced tomatoes, drained
  • 2 teaspoons dried Italian seasoning
  • 12 ounces cooked penne pasta
  • 6 ounces cream cheese, softened
  • 1 cup sour cream
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 tablespoon butter
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cook the penne pasta in salted boiling water until al dente, according to package instructions. Drain and set aside.

Step 3

In a large skillet, heat the olive oil over medium-high heat. Add the ground beef and cook until browned, breaking it into crumbles with a wooden spoon. Remove the beef and set aside.

Step 4

Add the butter to the skillet. Stir in the onions and cook until translucent, about 3-5 minutes. Add the garlic and cook until fragrant, about 1 minute.

Step 5

Add the mushrooms to the skillet and cook until softened, about 5-7 minutes. Season with salt and pepper.

Step 6

Return the ground beef to the skillet. Stir in the tomato sauce, diced tomatoes, and Italian seasoning. Simmer for 10 minutes to blend the flavors.

Step 7

In a medium bowl, combine the cream cheese and sour cream until smooth. Gently fold the mixture into the cooked pasta.

Step 8

Spread half of the pasta mixture into a greased 9x13-inch baking dish. Layer with half of the beef and mushroom mixture, and sprinkle with 1 cup of mozzarella cheese.

Step 9

Repeat the layers with the remaining pasta, beef mixture, and mozzarella cheese.

Step 10

Top the casserole with the grated Parmesan cheese.

Step 11

Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and continue baking for 10-15 minutes, or until the top is bubbly and golden brown.

Step 12

Let the casserole cool for 5 minutes before serving.
