Ingredients

  • 3 cups (cooked, cooled) long-grain white rice
  • 1 pound ground beef
  • 2 tablespoons vegetable oil
  • 1 medium (diced) onion
  • 3 cloves (minced) garlic
  • 1.5 cups (thawed) frozen mixed vegetables
  • 3 tablespoons soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 2 large (beaten) eggs
  • 2 stalks (sliced thinly) green onions
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon (or to taste) salt

Directions

Step 1

Cook 1 cup of dry long-grain white rice per package instructions, cool completely, and fluff with a fork to separate the grains. Set aside 3 cups of the cooked rice.

Step 2

In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Add the ground beef and cook, breaking it up with a wooden spoon, until browned and fully cooked. Drain any excess grease, transfer the beef to a plate, and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of vegetable oil. Toss in the diced onion and cook for 2-3 minutes, until softened. Add the minced garlic and cook for an additional 30 seconds until fragrant.

Step 4

Add the thawed mixed vegetables to the skillet and sauté for 2-3 minutes until tender. Push the vegetables to one side of the skillet.

Step 5

Pour the beaten eggs into the empty side of the skillet and scramble until cooked through. Mix the eggs into the vegetables.

Step 6

Add the cooled rice to the skillet, breaking up any clumps with a spatula. Stir everything together to combine.

Step 7

Return the cooked ground beef to the skillet and stir well.

Step 8

Drizzle the soy sauce, dark soy sauce, oyster sauce, and sesame oil over the rice mixture. Stir to ensure the sauce is evenly distributed.

Step 9

Season with black pepper and salt to taste. Stir-fry the mixture for 2-3 minutes to ensure all the flavors meld together and the rice is heated through.

Step 10

Turn off the heat and garnish with sliced green onions.

Step 11

Serve hot and enjoy!
