Ingredients

  • 4 pieces Chicken thighs (bone-in, skin-on)
  • 3 pieces Russet potatoes (large, peeled and cut into wedges)
  • 0.25 cup Olive oil
  • 0.33 cup Lemon juice (freshly squeezed)
  • 1 teaspoon Lemon zest
  • 6 cloves Garlic cloves (minced)
  • 2 teaspoons Dried oregano
  • 1 teaspoon Dried thyme
  • 1 teaspoon Paprika
  • 1.5 teaspoons Salt
  • 0.5 teaspoon Ground black pepper
  • 0.5 cup Chicken broth
  • 2 tablespoons Fresh parsley (chopped, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

In a large mixing bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, dried oregano, dried thyme, paprika, salt, and black pepper to create the marinade.

Step 3

Add the chicken thighs to the bowl and coat them thoroughly with the marinade. Set aside to marinate for at least 15 minutes.

Step 4

In a separate bowl, toss the potato wedges with 2 tablespoons of the marinade to coat them evenly.

Step 5

Arrange the chicken thighs in a large roasting pan or baking dish, skin-side up. Place the potato wedges around the chicken.

Step 6

Pour the remaining marinade over the chicken and potatoes, then pour the chicken broth into the bottom of the pan.

Step 7

Roast in the preheated oven for 60-75 minutes, basting the chicken and potatoes with the pan juices every 20 minutes. The chicken should reach an internal temperature of 165°F (74°C), and the potatoes should be golden and tender.

Step 8

Once cooked, remove the pan from the oven and let it rest for 5 minutes.

Step 9

Garnish with freshly chopped parsley before serving.

Step 10

Serve the chicken and potatoes warm with the pan juices spooned over the top for extra flavor.
