Ingredients

  • 3 medium-sized zucchini
  • 1 cup all-purpose flour
  • 3 large eggs
  • 2 tablespoons milk
  • 1.5 cups panko bread crumbs
  • 0.5 cups grated parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 cups vegetable oil

Directions

Step 1

Wash and dry the zucchini. Cut each zucchini into sticks approximately 3-4 inches long and 1/2 inch thick.

Step 2

Set up a breading station with three shallow bowls. In the first bowl, place the all-purpose flour. In the second bowl, whisk together eggs and milk until smooth. In the third bowl, combine panko bread crumbs, grated parmesan cheese, garlic powder, paprika, salt, and black pepper.

Step 3

Dredge each zucchini stick in the flour, shaking off any excess. Dip it into the egg mixture, letting the excess drip off, and then coat it thoroughly in the breadcrumb mixture. Place the breaded sticks on a plate and repeat with all zucchini pieces.

Step 4

Heat the vegetable oil in a deep skillet or heavy-bottomed pan over medium-high heat until it reaches 350°F (175°C). If you don't have a thermometer, test the oil by dropping in a small piece of bread—it should sizzle and turn golden in about 30 seconds.

Step 5

Carefully lower zucchini sticks into the hot oil in small batches, making sure not to overcrowd the pan. Fry for 2-3 minutes per side or until golden brown and crispy.

Step 6

Using a slotted spoon, transfer the fried zucchini sticks to a plate lined with paper towels to drain any excess oil.

Step 7

Serve warm with your favorite dipping sauce, such as marinara or ranch dressing.
