Ingredients

  • 1 lb ground beef
  • 1 cup breadcrumbs
  • 1 large egg
  • 0.25 cup milk
  • 0.5 cup onion, finely minced
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp garlic powder
  • 2 tbsp vegetable oil
  • 1 can (20 oz) pineapple chunks (in juice)
  • 0.5 cup ketchup
  • 0.33 cup brown sugar
  • 3 tbsp white vinegar
  • 1 tbsp soy sauce
  • 1 tbsp cornstarch
  • 1 medium bell pepper, diced (any color)
  • 0.25 cup water

Directions

Step 1

In a large bowl, combine ground beef, breadcrumbs, egg, milk, minced onion, salt, black pepper, and garlic powder. Mix until well combined.

Step 2

Shape the mixture into 1-inch meatballs and set aside on a plate.

Step 3

Heat vegetable oil in a large skillet over medium heat. Add the meatballs, cooking in batches if necessary, and brown them on all sides (about 5-7 minutes). Remove the meatballs and drain any excess grease from the skillet.

Step 4

Drain the juice from the pineapple chunks into a bowl and set the pineapple chunks aside.

Step 5

In the bowl with the pineapple juice, whisk together ketchup, brown sugar, white vinegar, soy sauce, and cornstarch until smooth.

Step 6

Return the skillet to medium heat and add the diced bell pepper. Cook for 2-3 minutes until slightly softened.

Step 7

Pour the sauce mixture into the skillet and bring it to a simmer, stirring constantly until the sauce thickens (about 2-3 minutes).

Step 8

Gently return the meatballs to the skillet and add the reserved pineapple chunks. Mix to coat the meatballs in the sauce and cook for an additional 5-7 minutes until the meatballs are cooked through and everything is heated.

Step 9

Serve the sweet and sour pineapple meatballs over steamed rice or noodles, and enjoy!
