Ingredients

  • 3 pounds chuck roast
  • 1 teaspoons salt
  • 1 teaspoons black pepper
  • 1 teaspoons onion powder
  • 1 teaspoons garlic powder
  • 2 tablespoons olive oil
  • 2 large onions, sliced
  • 4 large carrots, peeled and cut into chunks
  • 4 medium potatoes, peeled and quartered
  • 3 stalks celery stalks, cut into chunks
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoons dried thyme
  • 1 teaspoons dried rosemary
  • 2 tablespoons cornstarch
  • 2 tablespoons water

Directions

Step 1

Season the chuck roast generously with salt, pepper, onion powder, and garlic powder on all sides.

Step 2

In a large skillet over medium-high heat, heat the olive oil. Sear the chuck roast on all sides until browned, about 4-5 minutes per side.

Step 3

Place the sliced onions in the bottom of a large crock pot and lay the seared chuck roast on top.

Step 4

Arrange the carrots, potatoes, and celery chunks around the roast in the crock pot.

Step 5

In a medium bowl, mix the beef broth, Worcestershire sauce, dried thyme, and dried rosemary. Pour this mixture over the roast and vegetables in the crock pot.

Step 6

Cover the crock pot with a lid and cook on low for 8 hours, or until the meat is fork-tender and the vegetables are soft.

Step 7

Once cooking is complete, transfer the roast and vegetables to a serving platter and cover with foil to keep warm.

Step 8

To make a gravy, strain the cooking liquid into a saucepan, removing any solids. Bring to a simmer over medium heat.

Step 9

In a small bowl, whisk together the cornstarch and water to form a slurry. Slowly whisk the slurry into the simmering liquid, stirring until thickened, about 3-5 minutes.

Step 10

Serve the chuck roast and vegetables with the gravy drizzled on top. Enjoy!
