Ingredients

  • 8 cups (shredded) Green cabbage
  • 2 medium (shredded) Carrots
  • 2 pieces (thinly sliced) Green onions
  • 1 cup Mayonnaise
  • 1 tablespoon Vegetable oil
  • 2 tablespoons White vinegar
  • 1 tablespoon Granulated sugar
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Celery seed
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

In a large mixing bowl, combine the shredded cabbage, shredded carrots, and sliced green onions. Toss to mix evenly.

Step 2

In a separate medium-sized bowl, whisk together the mayonnaise, vegetable oil, white vinegar, granulated sugar, Dijon mustard, celery seed, salt, and black pepper until smooth and well blended.

Step 3

Pour the dressing over the cabbage mixture. Using a large spoon or pair of tongs, toss everything together until the vegetables are evenly coated in the dressing.

Step 4

Taste and adjust the seasoning with additional salt, pepper, or sugar, if desired.

Step 5

Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld and the cabbage to soften slightly.

Step 6

Before serving, give the coleslaw a quick toss to redistribute the dressing. Serve cold as a side dish with your favorite meal.
