Ingredients

  • 400 grams spaghetti
  • 150 grams pancetta or guanciale
  • 3 large eggs
  • 1 egg yolk
  • 100 grams Parmesan cheese (grated)
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon salt
  • 1 tablespoon olive oil

Directions

Step 1

Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente, according to package instructions.

Step 2

While the pasta is cooking, dice the pancetta or guanciale into small cubes.

Step 3

Heat the olive oil in a large skillet over medium heat. Add the pancetta or guanciale and cook for 5-7 minutes, stirring occasionally, until crispy and golden. Remove from heat but keep warm.

Step 4

In a medium bowl, whisk together the eggs, egg yolk, grated Parmesan cheese, and black pepper until smooth.

Step 5

Once the pasta is cooked, reserve 1 cup of the pasta water, then drain the spaghetti.

Step 6

Add the hot spaghetti to the skillet with the pancetta, tossing to coat evenly. Gradually pour the egg mixture over the pasta, stirring quickly to combine. The heat from the pasta will cook the eggs, creating a creamy sauce.

Step 7

If the sauce is too thick, add a small amount of reserved pasta water, one tablespoon at a time, until the desired consistency is achieved.

Step 8

Taste and adjust seasoning with additional salt and pepper, if needed.

Step 9

Serve immediately, garnished with extra grated Parmesan cheese and freshly ground black pepper, if desired.
