Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 0.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 1 teaspoons garlic powder
  • 1 can olive oil cooking spray
  • 1 large egg
  • 2 tablespoons low-fat milk (1% or skim)
  • 1 cup panko breadcrumbs
  • 3 tablespoons Parmesan cheese, grated
  • 1 teaspoons Italian seasoning
  • 2 cups marinara sauce (low-sodium, low-fat)
  • 1 cup low-fat mozzarella cheese, shredded

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with foil and lightly spray it with olive oil cooking spray.

Step 2

Using a meat mallet, pound the chicken breasts to an even thickness, about 1/2 inch, to ensure even cooking.

Step 3

Season both sides of the chicken breasts with salt, pepper, and garlic powder.

Step 4

In a shallow bowl, whisk together the egg and milk until well combined.

Step 5

In another shallow bowl, mix the panko breadcrumbs, Parmesan cheese, and Italian seasoning.

Step 6

Dip each chicken breast into the egg mixture, allowing any excess to drip off, and then coat it in the breadcrumb mixture. Press lightly to help the breadcrumbs adhere to the chicken.

Step 7

Place the breaded chicken breasts on the prepared baking sheet. Lightly spray the tops with cooking spray to help with browning.

Step 8

Bake in the preheated oven for 20 minutes. Flip the chicken over and bake for another 5 minutes, or until the chicken is cooked through and the coating is golden brown.

Step 9

While the chicken is baking, heat the marinara sauce in a small saucepan over low heat.

Step 10

Remove the chicken from the oven. Top each piece with about 1/2 cup of marinara sauce and sprinkle with shredded mozzarella cheese.

Step 11

Return the chicken to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.

Step 12

Serve the chicken immediately, garnished with a sprinkle of fresh parsley or basil, if desired.
