Ingredients

  • 1 pound ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1.5 cups frozen mixed vegetables (corn, peas, carrots, green beans)
  • 2 pounds potatoes, peeled and cubed
  • 0.5 cup milk
  • 4 tablespoons butter
  • 1.5 cups cheddar cheese, shredded
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

In a large skillet over medium-high heat, cook the ground beef until browned, breaking it up with a wooden spoon. Drain excess fat if necessary.

Step 3

Add the chopped onion and minced garlic to the skillet, cooking until softened, about 3-4 minutes.

Step 4

Stir in the tomato paste, beef broth, Worcestershire sauce, salt, and pepper. Simmer for 5 minutes until the mixture thickens slightly.

Step 5

Stir in the frozen mixed vegetables and cook for an additional 2-3 minutes. Remove from heat and transfer the mixture to a 9x13-inch baking dish, spreading it evenly.

Step 6

While the beef mixture is cooking, prepare the mashed potatoes. Bring a large pot of salted water to a boil, and cook the cubed potatoes until tender, about 15 minutes. Drain the potatoes and return them to the pot.

Step 7

Mash the potatoes with milk, butter, and 1 cup of shredded cheddar cheese until smooth. Add additional salt and pepper to taste.

Step 8

Spread the mashed potato mixture evenly over the beef and vegetable layer in the baking dish.

Step 9

Sprinkle the remaining 0.5 cup of cheddar cheese on top of the mashed potatoes. Optionally, sprinkle with paprika for added color.

Step 10

Bake in the preheated oven for 20 minutes, or until the cheese on top is melted and golden.

Step 11

Remove from the oven and let it rest for 5 minutes before serving. Enjoy your Kittencal's Cheesy Shepherd's Pie!
